Using a wood fired evaporator our syrup is slowly cooked giving it a very rich and robust flavour.
Here at Calabogie Rustic Farm we started making maple syrup in 1998. We set out a few cans and boiled it up in a pot over the campfire and we have been hooked ever since. In keeping with tradition, we still collect our cans using our team of Percheron horses, and our sap is still boiled on a wood-fired evaporator. Which means our syrup still has the same delicious, nutritious rich maple flavour that folks have come to love.
