Let the Cheese Do the Talking

When you start with great cheese — properly aged, full of flavour — the recipes almost write themselves. Here are three of our favourite ways to let Balderson aged cheddar take centre stage.

1. Classic Aged Cheddar Fondue

This version uses a sharp, aged cheddar for a deep, savoury flavour. You'll need: 300g Balderson aged cheddar (grated), 1 clove garlic (halved), 1 cup dry white wine, 1 tbsp cornstarch, 1 tsp Dijon mustard, a pinch of nutmeg, plus crusty bread, apple slices, and cornichons for dipping. Rub your pot with garlic, heat the wine, toss cheese with cornstarch and add in handfuls, stirring in a figure-8. Stir in mustard and nutmeg. Serve immediately.

2. The Ultimate Cheddar Cheese Plate

Start with a wedge of Balderson 5-year cheddar, then add something sweet (fig jam or pears), something salty (prosciutto), something crunchy (toasted pecans and crackers), and something fresh (grapes or apple slices). Arrange loosely and let the cheese be the hero.

3. Aged Cheddar Mac & Cheese (The Grown-Up Version)

You'll need: 250g pasta, 2 tbsp butter, 2 tbsp flour, 2 cups whole milk, 250g Balderson aged cheddar (grated), 1 tsp Dijon mustard, salt, pepper, cayenne, and breadcrumbs. Make a roux, whisk in milk, melt in the cheese and mustard, fold in cooked pasta, top with breadcrumbs, and bake at 375°F for 20 minutes.
