The Scotch Bonnet peppers pack flavours and depth that means this sauce makes a great marinade. Its fruitiness begs to be brushed on to white fish fillets or slathered on slabs of tofu that is then grilled. Delicious mixed through hot plain rice with fresh parsley and pine nuts.
